Boil 4 eggs, de shell and cut into 2 portions
Ingredients
1.Onion 2- sliced thin ,lengthwise
2.green chilly-4 slit in middle
3.ginger-1/2 inch thin log slices
4.garlic-2 piece thin long slices
6.curry leaves
7.salt-to taste
8.coconut oil- optional you can use any oil
9.coconut Milk- 1 1/2 cup of thin milk and 1/2 cup of thick milk
10.potato- 1 cut into small cubes
11. garam masala
Preparation.
- Heat oil in a pan and ,add onion and Add the ginger garlic,green chilly and curry leaves sauté till they are transparent.
- Make paste of corriander powder, chilli powder and add to the above.
- Add the potato and little bit of water cook well,add 1 1/2 cup of think coconut milk and adjust your taste with salt and garam masala.
- Add the cut wedges of egg slowly with out breaking and serve in good glass dish and garnish with green curry leaves.
Tips : to make curry thick add coconut finely ground in a mixer and add directly to the pan without extracting coconut milk.
