Egg stew kerala style



Boil 4 eggs, de shell and cut into 2 portions

Ingredients

1.Onion 2- sliced thin ,lengthwise
2.green chilly-4 slit in middle
3.ginger-1/2 inch thin log slices
4.garlic-2 piece thin long slices
6.curry leaves
7.salt-to taste
8.coconut oil- optional you can use any oil
9.coconut Milk- 1 1/2 cup of thin milk and 1/2 cup of thick milk
10.potato- 1 cut into small cubes
11. garam masala

Preparation.
  1. Heat oil in a pan and ,add onion and  Add the ginger garlic,green chilly and curry leaves sauté till they are transparent.
  2.  Make paste of corriander powder, chilli powder and add to the above. 
  3. Add the potato and little bit of water cook well,add 1 1/2 cup of think coconut milk and adjust your taste with salt and garam masala.
  4. Add the cut wedges of egg slowly with out breaking and serve in good glass dish and garnish with green curry leaves.
Tips : to make curry thick add coconut finely ground in a mixer and add directly to the pan without extracting coconut milk.






llpurpose flour(Maida) - 1 1/2 cups
Sugar - 1 1/2 cups
Eggs - 5 nos
Butter - 100 gm
Baking powder - 1 1/4 tsp
Milk - 1/4 glass
Vanilla Essence - 2 - 3 drops
Cashews - As reqd
Raisins(Onakkamunthiri) - As reqd

1)Grind sugar to a fine powder and mix well with the flour.

2)Add Baking powder and mix well.

3)Take 5 eggs and beat it well.

4)Add milk to the white portion.

5)Melt the butter and mix with the flour mix.

6)Add beaten egg into the above mix.

7)Mix the batter really well.

8)Grease the baking tray with some butter and to this sprinkle some plain flour and then add the mix.

9)Add cashews and raisins into the mix.

:- Don`t fill the tray to the brim. Fill it to its half the capacity.

10)Keep the batter in the oven at 100 degree celsuis for about 30-45 mins.


Note : dont beat batter too much after adding flour
